This has been a long time coming for Bluebird. Truth be told, it is quite hard to get large sums of agave out of Mexico. Bluebird found a way though. We were able to source Wild Heirloom Agave Syrup from a farm in southern Mexico. We then fermented and distilled it right here at Bluebird. This spirit came out really interesting. Since we created it from wild Agave, it is not quite Tequila and not quite Mezcal. It came out wonderfully clean, yet filled with character. See below.
